I made another of Betty Crocker’s vegetarian recipes a few days ago, and boy was it good.
It’s this recipe for Mediterranean Gratin. It has couscous, spinach, garbanzo beans, feta cheese, roasted red bell peppers, walnuts, and lemon zest in it. Wow. This is another one of those recipes that gets a huge flavor impact out of a fairly simple recipe. I made it exactly according to the recipe with the tiny exception that my couscous was Parmesan-flavored instead of roasted garlic-flavored.
I think the key to the recipe is the freshly grated lemon peel. If you make it and change anything else, don’t change that. It’s what makes the dish what it is. I really wouldn’t change a thing about the recipe when I make it again (and I definitely will).
I liked the walnuts, but pine nuts would probably be quite tasty too, if you prefer. And I think it would be just as good made with rice or quinoa, for those who can’t have couscous.
I would have liked to have had a photo for you (it’s quite pretty – white, yellow, red, and green), but we were too busy eating it for me to think about taking pictures.
Quite nice as a main dish (serves 4), especially with a green salad, but it would also make a good side dish – perhaps with some grilled or sauteed fish.

Funny – as soon as I saw the main ingredients, I thought “I wonder if I could make it with quinoa?” – I seem to have a lot in my pantry.
