Today’s recipe comes to you courtesy of Chris, who sent it to me after my last post about spaghetti squash.
Spaghetti Squash Casserole, from Dr. Weil’s Healthy Kitchen. It was pretty tasty, and a great way to use up some of the remaining garden veggies and herbs.
Dinner conversation with the Pontiff went something like this:
Me: “I got this recipe from the woman I slept with in Estes Park.”*
Him: Stares at me for a couple of seconds while he processes this information, then says “Interesting way to put it. It’s not quite the same thing as if I said ‘I got this recipe from the woman I slept with in Estes Park’.”
Me: “How do you know?” (Just kidding, I didn’t really say that.)
Him: “It’s good. It’s like… Spaghetti Squash Casserole.”
Me: “Exactly. That’s what it’s called.”
Him: “It’s the cheese that makes it.”

* Chris and I shared a room in a rental house at the Estes Park Wool Festival two years ago.





You do have a reputation for getting around, especially with grrls named Chris. That dinner had to very tasty!
