Oops. Was I singing that “minitune” out loud?

If you were following along, you’re probably either at least 50 or you’ve watched “Demolition Man” too many times. Or both, in my case.

But I did have good things from the garden yesterday.

First I made a tomato sauce:

Then I sliced, breaded, and fried some eggplant and layered it with some of the sauce and fresh mozzarella cheese:

Topped it with more sauce, some shredded Parmesan cheese, and baked it for a half hour:

The tomatoes, onion, bell pepper, garlic, eggplant and herbs all came from either my garden or my CSA box. I just had to add cheese, bread crumbs, olive oil and salt from the fridge and pantry. Oh, and a splash of red wine in the sauce, too.

And it came out pretty darn good. Sorry, there was/is no recipe, I just threw things together.

I forgot to take photos of yesterday’s CSA haul. I got peaches, Roma tomatoes (which of course, went into the sauce along with plenty of my own tomatoes), fingerling potatoes, and a winter squash.
