Thursday’s Harvest

Today’s delicious harvest: Japanese eggplant, yellow carrots, and blackberries from my garden, plus apricots from a neighbor’s tree. It doesn’t look like there will be very many blackberries this year, but I’m not surprised considering how much I cut them back last year. I planted “rainbow” carrots - yellow, white, orange, red, and purple. Mostly the ones that I’ve been harvesting are white or yellow. I wish I’d planted more in the first planting - I tried two subsequent plantings, but it got so hot this year, that I couldn’t keep the seeds damp enough for two weeks at a time to get them to germinate. But they’ve been fun - next year I’ll plant twice as many to start with.

harvest2.jpgFried Eggplant and Zucchini:

Slice eggplant and/or zucchini into thin slices. Dip in beaten egg, then in seasoned bread crumbs (add some grated Parmesan cheese, too, if you like). Fry in olive oil until browned on both sides. Serve as is, or top with pasta sauce and cheese, throw ‘em on a pizza, put ‘em in a sandwich, etc.

Eat ‘em up, yum!

This is the only way my husband will eat zucchini, because then it tastes like eggplant.
